YUM: Uncle Willie’s BBQ Opening Restaurant in Middlebury
It's going to smell so good driving along Middlebury Road (Rt. 64) starting in just another week or so. The savory aroma of real, wood-smoked pit BBQ is one of my favorites, it makes me go weak in my crappy knees.
A longtime master of the pit and a lifelong greater Waterbury resident and longtime restaurant owner of multiple locations around Connecticut, Uncle Willie, is on the verge of opening up a brand new location of his beloved Uncle Willie's BBQ right in his hometown of Middlebury at 492 Middlebury Road, in the restaurant on the side of the Citgo, that was most recently Blarney Stone Pizza.
Mrs. Large was driving through Middlebury today and she excitedly sent me these photos. We're big fans, I've been eating Uncle Willie's BBQ since he opened up in 1995 at his Chase Ave location in Waterbury, in West Haven, and most recently, in Seymour.
The pandemic unfortunately closed the Seymour location down permanently, but you can't keep a great pit man down. I just got off the phone with the man himself, Bill "Uncle Willie" Lombardi, who was gracious enough to fill me in few details on his upcoming venture back into feeding us hungry folk.
According to the man himself, Uncle Willie, he hopes that the new restaurant will be ready to open up "in a week or so". There are renovations going on inside the old Blarney Stone Pizza space and as anyone who's ever done food service knows, inspections and all the licensing, etc. can sometimes take a bit longer. The great news is, in the very near future, a delicious BBQ choice will be available for lunch and dinner in a very nice part of Middlebury.
Pulled Pork, Brisket, Ribs, Chicken, Chicken Wings & Tenders, Burnt Ends, Mac & Cheese, Baked Beans, Cole Slaw, Hush Puppies and Corn Bread will all be served up hot and ready. Uncle Willie's also offers different BBQ sauces on the side. I love their Carolina Vinegar sauce, it's so good.
