During the height of the onslaught of COVID-19 last fall, for many restaurants, it was "do or die." Restaurant patrons had no interest in going out to eat in fear of catching the virus.
Even with limited indoor seating, it simply wasn't enough to sustain some restaurants and unfortunately many went out of business. Many eateries that were able to hang on began looking at outdoor dining options.
As temperatures began to fall, restaurant owners around the state moved quickly to build creative outdoor seating options: plastic igloos, greenhouses, cabanas, and other heated, ventilated spaces.
With the onset of the coronavirus vaccine, many diners now feel safe about frequenting their favorite restaurants once again. Many restaurant-goers found they enjoyed the outdoor dining experience and restaurant owners got the message.
