Gourmet pretzels and craft beer are coming to Bethel — sign me up.

The Spot at 1 Front St. in Bethel had a good 13-year run until it closed its doors in February 2017. Is Bethel ready for a unique breed of brewpub?

John Schauster and Mike Boney created The Hop Knot chains in Middletown, Southington, and Storrs and now, the News Times has reported one of t bringing their pretzels and beers concept to Bethel. Three words on The Hop Knot website says it all: Pretzels, Beer, and Cocktails.

John Schauster has teamed up with Samantha Lupacchino, and their new restaurant at 1 Front St. will be called, Proof Bar & Cafe. Their mission is to not only turn Proof into a fun, casual evening eatery, but they also want it to be an easygoing lunchtime favorite as well. In their words, "Cafe by Day, Bar by Night." They plan on offering traditional warm pretzels, sandwiches, and desserts featuring fresh pretzel dough.

Let's talk beer. Proof will be featuring craft beers from all over the country including local Connecticut breweries.

The owners have been previewing various menu selections including a flatbread pretzel pizza and pretzel-wrapped oreo cookies.
