New Waterbury BBQ Restaurant Opening It’s Doors Soon

The Waterville section of Waterbury is popping lately, drive by Little Puerto Rico on a Friday night, and there's life, some excitement in the area. They had a different kind of excitement a couple of weeks ago when the massive water main break happened in front of Montambault's on Thomaston Avenue.

Well, get ready Thomaston Avenue/Waterville/Waterbury/BBQ lovers, because something is about to happen a lot more exciting than a 42 inch pipe bursting. Hindsight Barbeque is almost ready to open their doors to the public, and start serving up some unique smoked meats that our area so desperately needs.

They're going to be located at 1502 Thomaston Avenue, which was most recently  known as Models Bar & Grill. It's basically right across the street from Waterville Park. Hindsight bills themselves as "Wood-Fired, New-School, Craft BBQ" on their Facebook page, and if you've been to New England Brewing in Woodbridge, they've been there recently selling their food to the hungry beer lovers.

They haven't posted a menu, opening date, or hours yet, but looking at their website and Facebook page, they have served Ribs, Chicken, Brisket, Pulled Pork, Burnt Ends, Sausage, Bratwurst, Brisket Burgers, Chicken Wings, Smoked Turkey, Pork Belly, Smoked Queso, and Cornbread. Now, if you made it through that last sentence without drooling, I commend you.

There will be both indoor and outdoor seating when the restaurant opens it's doors, and as I said before, Hindsight hasn't settled on their opening date as of when I wrote this, but they do have a website, and their phone number is 475-233-2971.
