I make great chicken wings. Want to know how I do it?

I've been making chicken wings for years. I love them. Here's the way I make them:

1. BUY SMALL WINGS! I know some people prefer them meaty, not me. I like them small and crispy.

2. Grind some flake sea salt (Maldon sea salt is awesome) and pepper over the wings. flip them, and coat the other side. Keep it simple, don't over season.

3. Bake them at 350F for 20 minutes, take them out and flip them, and bake again at 350F for another 20 minutes.

4. Switch your over to broil, and broil them on one side for 7 minutes (keep and eye on burning, if they start to burn, move the tray around for even cooking) Take them out, flip them, and broil the other side for 5-6 minutes. Cooking is done now.

5. Now, this is where your preference for sauce comes in. I love coating the wings with a warmed mixture of a 1/2 a stick of butter, and a half a cup of Frank's Red Hot Sauce. Archie Moore's wing saice is great if you can find it, and you can never go wrong with Teriyaki and BBQ sauce. Anyway, hot out of the oven, put the wings in a large bowl, cover with your choice of sauce, and toss until evenly coated.

6. The best part---shred those wings! Enjoy!
